While working on another guide I figured this out, so thought I would share it quickly if you are struggling with these fights!
This is definitely patched and DOES NOT work anymore for those who are still wanting to try it.

Took me like 30+ tries but I finally beat the Buck dude with the sniper rifle. Beat him at lvl 14. Didnt know u cant use sniper until lvl 22 lol. If you get in his face right from the start it helps. Hit him until he puts his block up. Then when he drops guard hit him again with heavy hit. He will stumble and put his guard up again. Rinse and repeat. Its hard though not gonna lie. Gotta time everything just right. I upgraded my machete as much as I could. Played around with 4 perks I had saved. Had a blank Blades tree, put my 4 points into Strong attack boost 50% and reduced stamina cost. Was able to get him down around 4% with one heavy hit. Once I knew I could do some damage in his face this worked. Heavy hits mostly and throw in some regular hits when you can. Just dont get hit by him!! Hope that helps
I don't think a knife works cuz that all I got and everytimw i click equip after I drop it it just stashes it and can only use my fists

The most annoying part of these is how they can heal but you can't.
The fighting in this game is soo trash that we have to use exploits to have a fair chance…
remember this game has keanu reeves in it…
For me (the idiot) (ps4 triangle) was the euip button. Didn't even know there was an eqip button. (Thanks for whoever said make sure all slots are full)

best easy way to beat one side mission…
Bruh I think these are the only missions that requires you to level up a certain stat (body) in order to complete it or else it is almost impossible to beat these fighters and since you have to complete ALL gigs to get the trophy these fights are so frustrating, I play the game on Very hard difficulty but I change it to easy before going to fight
